I'm interested in scanning photo's for carving. Can this be achieved on this program?

If you want something that approximates (2d only) what a laser would do then Vectric's PhotoVCarve works with the shark. It's a lot more involved than just scanning a picture and pushing the print button, but some users have gotten really impressive results. You can read more about it here:

If you want to create a 3D low relief carving from the photo (or any other bitmap) then something like Aspire (see same website as above) would let you do it, but it's not a trivial exercise. Expect a steep learning curve for something like turning a photo into a 3d carving.
