I just found out about the CNC Shark today.
Can it be used to route/cut-out an electric guitar body from a wood slab?

Yes it can. The ease of doing so will depend on your skill / and requirements. The Shark itself will not be the limiting factor. Your ability to create a toolpath for the shark will likely be your biggest challenge. A 2D cutout that you will carve / shape by hand to finish will be pretty easy. A complicated 3D model will require more skill / and additional software beyond what comes with the shark.
