Latest plaque I made of red oak and a clear finish. Size is 8 x 12. Used a 60 deg v bit for lettering and a 1' dish carving bit from rockler for the pocket toolpath. The pocket is .25 deep.

Hi Tony. You just keep coming up with great ideas. I'm assuming you cut the pocket first, then set your z 0 at the pocket floor to start your carving? Keith

If the bottom of the pocket is flat, and if the lettering was just resized slightly smaller (so none of the lettering reaches any of the far outreaches of the outer curved surface), all you need to do is specify the V-Carve Start Depth to be the same as the depth of the pocket. The V-Carve would then automatically "know" to start at the base of the pocket. No need for setting two different z-zeros in that case.
